How Would You Make An SEO Strategy For A Deals Website That Have Dynamic Content?

In episode 389 of our weekly Hump Day Hangouts (https://www.youtube.com/watch?v=ACgvs14kbwA), one participant asked how to make an SEO strategy for a deals website that have dynamic content. The exact question was: hey guys just took on a new client that wants to build a large ecommerce site that functions as a ""deals"" marketplace where they add products and people contact to get pricing and other info. The client also wants seo etc going forward, I am thinking to add appropiate categories in sometime like ecwid and add all the products with onpage etc however the problem is the client will be adding and deleting lots of products as they come and go in a short space of time so not sure if its worth optimising all the onpage for each product. How would you approach the SEO part of this to prevent tons of 404's and getting a drive stack etc? Would you direct links at categories instead first time doing sometime like this so wanted to get a second opinion.
